Masala Dosa

Made from a 70:30 rice-urad batter fermented for at least 18 hours. The dosa should be crisp, golden, slightly sour, brushed with ghee (not oil), and filled with a Bengaluru-style aloo bhaji. Served with hot sambar and 3 chutneys (coconut, tomato, red Mysore).

Idli

Should be snow-white, spongy, and steamed to order. Pre-steamed idli that sits in a warmer dries out within 20 minutes.

Uttapam

Thicker than dosa, cooked on a low flame, topped with onion-tomato-chilli-coriander. The base should be soft, not crisp.

Rava Dosa

A semolina-rice batter ladled instantly onto a hot tawa to form a lacy crepe. Crispier than masala dosa, peppery, eaten within 5 minutes of plating.
